Keto is fast becoming a new way of eating for many and tasty recipes are key to maintaining the keto lifestyle. Good, healthy food that tastes great supports success and motivation. Keto refers to the ketogenic diet that focuses on high-fat and increased protein intake with little to no carbohydrates. If followed properly, the ketogenic diet causes the body to burn fat for energy instead of carbohydrates, putting the body into a metabolic state known as ketosis. Ketosis reduces blood sugar and insulin levels and can reduce weight and alleviate various medical issues.

Most people love their carbs but it is something you have to give up when doing keto. While increasing fat intake isn’t difficult for most people, reducing carbs can be very hard. Fewer carbs mean going sugar free (including fructose, glucose, and lactose) and eliminating starch and fiber that are found in grains, starchy vegetables, rice, fruits, and milk products. Many food items that we buy every day have hidden carbs in them.  Finding a good low-carb bread recipe allows people to enjoy something similar to their old favorites like a burger bun or English muffin which is helpful when eliminating carbs from your diet.

This low carb recipe for the ketogenic lifestyle works well as a carb substitute because it’s made with almond flour and is fluffy with good taste. More importantly, it has the texture of whole wheat bread with no eggy taste that many low carb recipes often have. Finding a good bread recipe is a big help when reducing carbs as it opens up the door to food items such as sandwiches and toast. The keto diet feels less limiting when you expand your recipe repertoire. Another bonus is that the almond flour bread recipe is also made with gluten-free ingredients!

Almond Flour Bread – Low Carb

Almond Flour Bread is a simple recipe with few ingredients. While no recipe for keto bread will completely mimic the taste and texture of regular bread, this recipe comes close. Almond flour gives the bread a somewhat sweet and nutty flavor, similar to whole wheat bread.  It also contains psyllium husks that contribute to the whole-grain feel as well as adding lots of fiber. The biggest plus of this recipe is that it is not overpowered with the taste of eggs as many keto breads are. Many recipes for keto bread call for up to 7 eggs to hold the ingredients together.  This means the bread ends with an eggy taste and a spongy texture.  This easy keto bread recipe only has 2 whole eggs and 2 egg whites to reduce the egg taste and help it retain a fluffy consistency.

This recipe for keto bread includes the more unusual ingredient of xanthan gum. The reason to use this particular ingredient is that when you remove gluten from a recipe through the lack of wheat, the bread loses its structure and becomes crumbly. By adding xanthan gum, the almond flour bread gains structure and a firm crust.

What You Need - Ingredients

  • 2 eggs
  • 2 egg whites
  • 2 cups almond flour
  • ¼ melted butter
  • 4 tablespoons psyllium husks/ 2 tablespoons xantham gum powder
  • 1 ½ teaspoon baking powder
  • ½ teaspoon xanthan gum
  • Sprinkle of salt
  • ½ cup of warm water

Crack 2 room temperature eggs in a bowl along with 2 extra egg whites. Whisk all the eggs together for approximately a minute until they are frothy.

Add the remaining ingredients to the eggs and mix with a hand mixer.

Mix until dough is smooth. Make sure not to mix too much as overmixing removes the air and makes the bread heavy when cooked.

Put the dough into a lined loaf pan. If the pan isn’t silicone, use parchment paper to make sure the bread doesn’t stick. Once the dough is in the pan, press down lightly on top but not too much. You want to keep the air in the dough and not press it out.

Bake at 350-degrees Fahrenheit for about 45 minutes. Make sure to check on the bread as you get closer to the end of this time. Insert a toothpick or knife to see if it comes out clean. Put back in for a few more minutes at a time until there is no residue on the toothpick or knife.

Cool, butter, and enjoy!

Tips for Better Bread

If your ketogenic bread does not come out of the oven as light as you would like, here are some suggestions that will make your recipe for keto bread comes out fluffier:

Always use fresh ingredients, especially the baking powder.

While you want your eggs frothy with air, don’t overmix once you add the flour and other ingredients. You want to keep the air in the mixture at all times.

Make sure to use room temperature eggs and warm water. Cold ingredients mean it takes longer for the dough to warm up in the oven and this can affect how the baking powder works.

Bonus Tips

Keep the extra egg yolks to make homemade mayonnaise.

You can use extra baking powder if you do not have xanthan gum.

Almond four bread is ok on the counter for a couple of days and up to a week in the fridge or the loaf can be frozen. Slice ahead of freezing and you can thaw pieces as needed.

Watch when you toast this bread. It toasts faster than regular bread.

This recipe for keto bread is a great addition to anyone’s keto lifestyle because it uses few ingredients, is easy to mix, and quick to cook. The almond flour bread is tasty and a healthy replacement for the regular carbohydrate-laden bread that you may be missing, a healthy recipe that allows you to return to having sandwich buns and toast with cream cheese in a keto-friendly lifestyle.
